Ayiti in Six is Chef KO’s signature six-course dining experience—an intimate exploration of Haiti told through ingredients, memory, technique, and the table.
Over six thoughtfully paced courses, Chef KO presents familiar Haitian flavors through a contemporary lens while remaining rooted in the traditions, ingredients, and techniques that shaped them.
Each course opens another window into Haiti: regional ingredients and agricultural traditions, dishes carried through generations, culinary rituals, celebration, memory, resistance, and the ways Haitian cuisine continues to live and evolve.
This is a chef-led tasting experience, not a cooking class. Guests are invited to settle in, be served, and allow the evening to unfold course by course. Throughout the meal, Chef KO introduces select ingredients, techniques, and stories that give context to what is being served.
Expect thoughtful plating, intimate storytelling, communal moments, select tableside finishes, sensory elements, and a dining room designed for you to slow down and experience Haiti beyond the plate.

The Culinary Journey
The six-course menu changes seasonally, allowing Chef KO to work with ingredients at their best while exploring different expressions of the Haitian table.
Guests may encounter elements such as:
Haitian fritay and small bites
Djondjon and other ingredients distinctive to the Haitian pantry
Seasonal vegetables and plantains
Poul Nan Sòs and traditional Haitian sauces
Fresh seafood and whole fish preparations
Diri and other Haitian grains and accompaniments
Kremas, tropical fruit, warm spices, and reimagined Haitian sweets
The final menu is intentionally kept as part of the experience and may evolve based on seasonality and ingredient availability.

Ayiti in Six is presented as a curated tasting menu, and several courses may contain meat, seafood, dairy, gluten, nuts, or other allergens.
Please disclose all food allergies and dietary restrictions at the time of booking. We will make reasonable efforts to accommodate guests when possible; however, because of the format of the tasting menu, not every substitution or dietary restriction can be accommodated.
If you have a severe allergy or significant dietary restriction, please contact us before purchasing your seat so we can confirm whether the menu can safely accommodate you.
Reservation Policy
Because each menu is prepared specifically for the number of confirmed guests and seating is extremely limited, all reservations are final and non-refundable.
If you are unable to attend, your reservation may be transferred to another guest with advance notice.
The tasting menu is served as one shared progression, so we encourage guests to arrive on time to experience all six courses.
