Join Chef KO for an intimate, hands-on exploration of Chokola Ayisyen, Haiti’s deeply aromatic hot chocolate made from cacao and layered with warm spices, citrus, and creamy milk.
This experience begins with the cacao itself. Guests will discover the Haitian cacao ball, learn how it is transformed into a rich chocolate base, and build flavor slowly using the ingredients that give Chokola Ayisyen its unmistakable warmth and fragrance.
Together, we’ll work with cinnamon, star anise, lime zest, nutmeg and rich milks, learning how each ingredient changes the aroma, body, sweetness, and finish of the chocolate.
Then we gather.

The Experience
We’ll begin by exploring the ingredients that make Haitian hot chocolate distinct before moving into guided preparation.
You’ll learn how to work with a traditional Haitian cacao ball, develop the chocolate base, build an aromatic spice infusion, and finish the drink with creamy milk for the right balance of chocolate, spice, richness, and sweetness.
Along the way, Chef KO will share the traditions and memories surrounding Chokola Ayisyen and the role food and drink play in creating moments of comfort, gathering, and connection.
Once the chocolate is ready, we’ll slow down and enjoy it together around the table.
